Maple Granola

  • 2/3 cup maple syrup

  • 1/3 cup coconut oil (or olive oil)

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 3 cups old-fashioned oats

  • 1 cup roasted pepitas

  • 1/2 cup craisins

  • 1/2 cup dark chocolate chips

Heat oven to 300 degrees.

Line a sheet pan with parchment paper and set aside.

Combine maple syrup, oil, salt, cinnamon and vanilla in a small bowl.

In a larger bowl, mix oats and pepitas. Add the syrup mixture and toss until evenly combined.

Spread granola on the baking sheet evenly. Bake for 25 minutes. Then stir and rotate the pan 180 degrees for even baking. Bake for another 20 mins.

Stir again out of the oven. For flaky granola, stir occasionally until cool. For granola clusters, let cool without stirring.

Once cool, add craisins and chocolate chips. Or use any other add-ins you prefer!
