Maple Brown Sugar Cookies
These cookies can be made with icing, or without. Either way, they taste great!
1 cup butter, melted and cooled
1 1/2 cups brown sugar, packed
1/3 cup maple syrup
1 teaspoon vanilla extract
1 large egg, lightly beaten
3 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Melt butter in large, microwave-safe bowl and allow to cool.
Stir in brown sugar and maple syrup until completely combined.
Stir in vanilla extract.
Add egg and stir until well combined.
In separate, medium-sized bowl, combine flour, cornstarch, baking powder, baking soda and salt.
Gradually add the flour mix to the butter mix and stir until completely combined.
Chill in refrigerator for 30 mins to 1 hour.
Preheat oven to 375 degrees.
Scoop dough onto cookie sheet and bake for 10-12 mins.
Allow to cool before adding icing.
Maple icing:
3/4 cup confectioners sugar
2 Tablespoons maple syrup
1 Tablespoon milk
Stir until completely combined.
