Maple Pumpkin Bread

This makes 2 moist and yummy loaves.

  • 3 cups maple syrup (bring to room temp, or warm up)

  • 4 eggs (room temp)

  • 1 cup oil

  • 2 cups pumpkin (1 can)

  • 4 1/2 cups flour

  • 3/4 tsp baking powder

  • 1 1/2 tsp cinnamon

  • 1 1/2 tsp baking soda

  • 1 1/2 tsp ground cloves

  • 1 1/2 tsp nutmeg

Preheat oven to 300. Prepare 2 loaf pans with parchment paper.

Beat eggs, oil and maple syrup. Add the pumpkin.

In a separate bowl, mix flour, baking powder, cinnamon, baking soda, ground cloves and nutmeg.

Add the dry ingredients to the wet ingredients in thirds. Mix well after each addition.

Bake 1 hour and 20 minutes. Bread is done when a toothpick inserted in the middle comes out clean.
